Aerated Waters - Kilmarnock

My GGrandfather Joseph was the third son of eight children of a poor coalmining family at Riccarton near Kilmarnock Scotland. The children of one brother Matthew emigrated to Gympie Australia. The other brother John stayed in coalmining and eventually moved to the east coast of Scotland. Joseph was firstly a miner then somehow he became a schoolmaster and then a biscuit agent. He and his wife had 13 children. In the late 1800's he went into aerated waters and did extremely well leaving a very handsome estate. The factory was on a property called "Riverbank" in Kilmarnock which had previously been a locomotive engine manufacturing works known as John Barclay & Co. Barclay's second wife was a Caldwell but apparently not related directly to our branch.
The whole story is a puzzle to me and if anyone has any clues to this story it would be appreciated.
